Ingredients
Salmon
2 salmon fillets
1 tsp kosher salt
½ tsp black pepper
½ tsp garlic powder
½ tsp ground coriander (or paprika if you prefer)
1 tsp neutral oil
Chili Crisp Sweet Potatoes
1 large sweet potato, peeled + 1-inch cubes
1½ tbsp olive oil
Salt
1–2 tbsp chili crisp (adjust to heat preference)
Zest of ½ lime
Grapefruit-Cucumber Salad
1 grapefruit, segmented
½ cucumber, small dice
1–2 tbsp thin sliced shallot
1 tbsp chopped mint or cilantro
1–2 tsp rice vinegar
Pinch salt
Tiny drizzle olive oil
Ginger Scallion Oil
3 tbsp neutral oil
1 tbsp sesame oil
2 garlic cloves, smashed
1 tbsp finely minced ginger
2 scallions, thin sliced
Pinch salt
Preparation
Chili Crisp Sweet Potatoes (IMPORTANT ORDER)
Toss potatoes with olive oil + salt
Roast at 425°F for 25–30 min
Once out of oven, toss with:
chili crisp
lime zest
Grapefruit-Cucumber Salad
Combine everything
Let sit 5–10 min
Ginger Scallion Oil
Heat ginger + garlic + scallion
Pour oil and let flavors infuse
Add sesame oil
Salmon
Pat dry
Coat evenly with rub
Sear presentation side first (~4 min)
Flip, cook 2–3 more min
