About the Recipe

Ingredients

 Salmon


  • 2 salmon fillets

  • 1 tsp kosher salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ½ tsp ground coriander (or paprika if you prefer)

  • 1 tsp neutral oil



 Chili Crisp Sweet Potatoes


  • 1 large sweet potato, peeled + 1-inch cubes

  • 1½ tbsp olive oil

  • Salt

  • 1–2 tbsp chili crisp (adjust to heat preference)

  • Zest of ½ lime



 Grapefruit-Cucumber Salad


  • 1 grapefruit, segmented

  • ½ cucumber, small dice

  • 1–2 tbsp thin sliced shallot

  • 1 tbsp chopped mint or cilantro

  • 1–2 tsp rice vinegar

  • Pinch salt

  • Tiny drizzle olive oil



 Ginger Scallion Oil


  • 3 tbsp neutral oil

  • 1 tbsp sesame oil

  • 2 garlic cloves, smashed

  • 1 tbsp finely minced ginger

  • 2 scallions, thin sliced

  • Pinch salt

Preparation

Chili Crisp Sweet Potatoes (IMPORTANT ORDER)



  • Toss potatoes with olive oil + salt

  • Roast at 425°F for 25–30 min 

  • Once out of oven, toss with:

    • chili crisp

    • lime zest



 Grapefruit-Cucumber Salad


  • Combine everything

  • Let sit 5–10 min



Ginger Scallion Oil


  • Heat ginger + garlic + scallion

  • Pour oil and let flavors infuse

  • Add sesame oil



 Salmon


  • Pat dry

  • Coat evenly with rub

  • Sear presentation side first (~4 min)

  • Flip, cook 2–3 more min
